Farm Box Week 1:

  • 1 Pint of Strawberries!
  • 1 Bunch of Leeks
  • 1 Bunch of Green Garlic
  • 1 Bunch of Carrots
  • 1 Head of Lettuce
  • 1 Bag of Spinach
  • 1 Bunch of Bok Choy
  • 1 Bunch of Radishes
  • 1 Bunch of Cilantro

 

 

Ashley’s Asian Spring Stir-fry

I have been making this stir-fry for years. When you have lots for spring roots, and asian greens (bok choy, pak choy, napa cabbage or komatsuna) this is a quick and easy dish to make.

Ingredients: 

  • Bok Choy
  • Radishes
  • Carrots
  • Garlic
  • Cilantro
  • Soy Sauce, Braggs Liquid Aminos, Coconut Aminos, other Asian Sauce of your choosing
  • Rice wine vinegar
  • Honey or Sugar
  • Coconut oil or other high heat oil

Method:
1. Chop Bok Choy stems into strips. Separate the greens (also cutting into strips) . Thinly slice radishes (I chop in half and then into thinly sliced half circles) Chop carrots into small circles or half circles. Mince green garlic (only cut up until the green part , similar to a leek) . Chop up Cilantro  and put into a dish for garnish later.
2. Heat up a cast iron skillet, wok, or stainless steel saute pan, with coconut oil or another high heat oil to medium or high heat.
3. Once oil is hot add all the veggies. I do this in stages, starting with the item that takes the longest to cook and working my way up.

  1. Carrots. Add, and cook for 2 to 3 minutes. Then add #2
  2. Bok Choy Stems. Add and cook for 3- 4 minutes then add #3.
  3. Radishes and Garlic. (depending on how thinly you slice them). Add and cook for 2 minutes then add #4.
  4. Add Bok Choy Greens, Liquid aminos and rice wine vinegar, honey or sugar (or no sweetener at all) to your desire. Add and cook until everything is cooked till tender.

4. Add Cilantro as a garnish and serve over rice, by itself or with noodles or soba,etc.

 

 

 

 

Spinach and Strawberry Salad

If you are capable of not eating all the strawberries before you get home, one of my favorite salads this time of year is spinach and strawberries. They only collide for a few weeks a year, and it is sooo worth it!

Ingredients:

  • Spinach
  • Strawberries
  • Sliced Almonds
  • Feta or soft cheese of your choosing
  • Salad Dressing- any sort of fruity balsamic

Method: 
1. Tear up our gorgeous spinach into smaller pieces.
2. Slice strawberries.
3. Top with almonds and cheese.
4.. Serve with Salad Dressing. Enjoy!
